1½ c. boiling water
1 c. quick oats

½ c. Crisco
1 c. white sugar
1 c. light brown sugar
2 eggs
1 tsp. real vanilla extract

1¾ c. flour
1 tsp. baking soda
½ tsp. salt
1 tsp cinnamon

Directions:

Preheat oven to 350º

Combine first two ingredients and set aside. Cream together Crisco, sugars, eggs, and vanilla, set aside. Sift together flour, soda, salt, and cinnamon.

Starting with dry ingredients, slowly add creamed ingredients, then fold in oatmeal mixture. Bake in non-stick loaf pan for 1 hour, or until toothpick comes out clean. Cool in pan for 15 minutes, remove to rack to cool for 1 hour before slicing.
