2 c unbleached flour
1 tbsp baking powder
3/4 tsp salt
10 tbsp cold unsalted butter, cubed
3/4 cup finely diced ham
1/2 c grated sharp cheddar cheese
1/2 c + 3 tbsp cold buttermilk

Directions:
Directions:
Preheat oven to 425 F. Line a baking sheet with parchment. Whisk dry ingredients. Work in butter by hand until mixture is crumbly. Add ham and cheese. Stir. Add buttermilk and stir. Turn dough onto clean surface and knead for 1 min. Divide dough in half, pat into a 3/4 in. circle. Cut biscuits with a 2” round cutter. Place on baking sheet> Brush tops with remaining 3 T. buttermilk, or melted. butter. Bake for 12-15 mins.
