2 ripe bananas,
2 eggs,
2 cups of oat flakes,
1/2 cup of chopped walnuts or almonds,
1/4 cup of dried fruit (e.g., raisins, dates, cranberries),
1/4 teaspoon baking powder,
A pinch of salt.

Peel the bananas and mash them with a fork into a purée. The riper the bananas, the sweeter the cookies will be.


Add eggs to the bananas and mix.
Add oat flakes, nuts, dried fruit, baking powder, and salt.
Mix everything thoroughly.
Form cookies from the mixture and place them on a baking sheet lined with parchment paper.
Preheat the oven to 356 degrees Fahrenheit and bake for about 15-20 minutes until the cookies are a golden brown color.
If the cookies are too soft, bake them for a few minutes more. The finished cookies can be stored in a tightly sealed container for several days.

Feel free to add additional dried or fresh fruits to the cookies, such as plums, apricots, cherries, and apples. If you have a sweet tooth, you may also add a tablespoon of honey or maple syrup. Enjoy your homemade treat!
