1/4 cup Crisco
1 cup brown sugar
1 egg
1 tsp. vanilla
1 3/4 cup flour
1/2 tsp. soda
1/4 tsp. salt
1/2 tsp cream of tartar
Directions:
Directions:
Cream together Crisco, brown sugar and egg. Add vanilla, flour, soda, salt, and cream of tartar, Mix thoroughly.

Roll out dough and cut into circles, desired size.

Put desired amount of filling in center of a cookie, top with another cookie and press around edge of cookie to seal edges. Take a fork and go around edges. Place a slit in top to vent.

Bake in a preheated 350º oven for 10-15 minutes.

Filling:
1/4 cup sugar
1 Tbsp. cornstarch
1 cup undrained pineapple
1 tsp. lemon juice

Cook until thickened.
