Banana Oatmeal Cookies


½ cup vegetable shortening
1 cup sugar
1 egg
¾ cup bananas, mashed
½ cup nuts
1 ¾ cup oatmeal, (Quick Cooking)

1/1/4 cup flour
½ tsp salt
½ tsp baking soda
¼ tsp ground cloves
¾ tsp cinnamon
½ raisins (optional) or nuts.

1. Cream shortening and sugar together.
2. Add egg and blend thoroughly.
3. Add bananas and nuts and mix well
4. Add oatmeal and mix.
5. Sift or stir dry ingredients together.
6. Add dry ingredients to mixture and mix thoroughly.
7. Drop by rounded teaspoons (or # 30 scoop, rounded) onto parchment paper
or well oiled cookie sheet.
8. Bake at 375 degrees for 9-10 minutes.
( In convection oven bake at 350 for 7-8 minutes)
