6 smaller sized ripe bananas, no brown spots
2 ¼ c. all purpose flour
2 Tbs. granulated sugar
3 tsp. baking powder
2 tsp. corn starch
¼ tsp. salt
2 c. water
3 c. vegetable oil, more or less depending on size of pan

Topping:
⅓ c. maple syrup, OPTIONAL
⅓ c. honey, OPTIONAL
3 tsp. sesame seeds, OPTIONAL
2 c. vanilla ice cream, OPTIONAL
1 tsp. cinnamon, OPTIONAL

1. Slice the bananas lengthwise, remove peel and then cut into four pieces.
2. In a large bowl, whisk together flour, sugar, baking powder, corn starch, and salt.
3. Whisk-in the water until batter is smooth.(batter should be thin, to drip off. Add more water if necessary.)
4. Heat oil in a non-stick pan or wok to medium-high heat, about 350º
5. Dip banana pieces one by one in batter, shake excess and slowly place into hot oil being careful not to let the banana touch the bottom of the pan. Do not crowd the pan. There should be enough oil for the bananas to float.
6. Cook until golden and place on paper towel lined plate to absorb excess oil.
7. OPTIONAL: Drizzle honey over bananas and sprinkle on the sesame seeds. Serve with ice cream.
