1 box yellow cake mix
1 can mandarin oranges, drained and chopped
1 can crushed pineapple, drained
12 oz. Cool Whip™
1 small box instant vanilla pudding mix

Directions:
Mix cake as directed by package and add well-drained chopped mandarin oranges. Cook as directed by package.

While cake is cooking, mix together Cool Whip™ and instant pudding, adding slowly while mixing to avoid clumps. (Use ¾ to 1 package instant vanilla pudding mix depending on the sweetness you desire.) Once mixed, add drained crushed pineapple to Cool Whip™ mixture, icing cake when cooled.

This cake does well as a 9x13" cake or a 2-tiered layered cake.

My mom has made this cake for years. It's simple and tastes great. A light cake that is full of flavor. Everyone loves it.
