2 cups elbow macaroni
2 Tbls butter or margarine
1 Tbls flour
2 cups skim milk
2 cups shredded cheddar cheese
1/4 small onion, grated or finely chopped
1 tsp salt
1/3 cup breadcrumbs

Directions:
Directions:
Cook macaroni, drain, set aside.
Melt butter or margarine in saucepan. Add onion, flour, and then milk. Add salt. Heat on medium high heat while stirring constantly. When mixture is at a rolling boil, add 3/4 of the cheese (save the other 1/4 for the top). Stir well until all cheese is melted. Put macaroni in a casserole dish, pour cheese sauce over mixture, stir. Top with remaining cheese and breadcrumbs. Bake uncovered in a 400 oven for 35 to 40 minutes.
