Cranberry Orange Shortbread Cookies Recipe

1 cup unsalted butter, softened
½ cup powdered sugar
1 tsp vanilla
1 tsp orange zest
1 ¾ cups flour
½ cup cornstarch
¼ tsp kosher salt
1 cup dried cranberries, chopped

Directions:
1. To the bowl of a stand mixer add butter and powdered sugar. Beat on medium speeed until creamy.

2. Add vanilla and orange zest (I used a bit more orange zest than called for, use your judgment based on how orangey you're feeling). Mix until incorporated

3. In a separate bowl whisk together flour, cornstarch, and salt

4. Add in flour mixture to mixer 1 cup at a time

5. Fold in cranFirberries

6. Add dough to a floured surface and roll into a 6 " log, about 3" in diameter. Wrap in plastic and seal the ends. Place dough in refrigerator to chill for 1 hour or until firm

7. When ready to bake, preheat the oven to 350º. Line 2 large cookie sheets with parchment

8. Remove the dough from the refrigerator and slice on a cutting board into ¼" slices and place cookies onto the cookie sheet about 1" apart.

9. Bake 12-14 minutes, or until just slightly browned

10. Let cookies rest 5 min then transfer to a wire rack to cool
