For the cookies:
½ cup sugar
1 cup brown sugar
1 cup butter, soft
2 eggs
1 tsp vanilla
2 cups flour
2 tsp baking powder
½ tsp baking soda
1 tsp cinnamon
½ tsp salt
2 cups oatmeal
Date filling:
2 cups chopped dates
1 cup water
½ cup sugar

Cookies:
Beat butter, sugar and brown sugar until light and fluffy. Add eggs and vanilla, beat until well combined.
Combine flour, baking powder, baking soda, cinnamon and salt. Add to butter mixture just until combined. Add oatmeal just until combined.
Roll into balls, flatten. Place on ungreased or parchment paper lined baking sheet.
Bake at 350º for 10 to 12 minutes. Cool.
Date Filling:
Combine all ingredients in a saucepan. Bring to a boil, reduce heat to low, cook for about 5 to 7 minutes, stirring often. Mixture will be thick. (I grind my dates first, then run through food mill after cooked.) Cool.
Spread filling on flat side of cookie, put another on top to make a sandwich.
