For the filling:
2 cups dates, chopped or ground
½ cup sugar
2 TBSP flour
1 cup water
½ cup chopped nuts
For the cookies:
1 cup shortening
2 cups brown sugar
2 eggs
1 tsp vanilla
1 tsp soda in ½ cup warm water
4 cups flour
¼ tsp salt

Directions:
Directions:
Date filling:
Cook the dates sugar, flour, water and nuts until thick, stirring constantly so it doesn't scorch. Cool.
For the cookies:
Cream shortening and sugar, add eggs and beat. Add rest of ingredients.
Drop by teaspoonful onto cookie sheet. Make a hole in the middle, add a teaspoon of filling. Drop a little dough over the filling.
Bake at 350º for 12 to 15 minutes or until brown.

1 cup ground dates

a little lemon juice
Cook until thick. Cool.
