1-2 lbs Beef stew meat
1/4 c flour
2 T oil
1med onion chopped
1Tablespoon minced Garlic
4-6 Potatoes peeled and quartered
4 to 6 carrots, peeled and chopped
Any additional leftover vegetables that you have in the refrigerator: corn, green beans, peas etc.
One can stewed or diced tomatoes including juice
1/2 med. head of cabbage chopped into bite-size pieces
2 teaspoons salt, 1 teaspoon pepper, 1 tablespoon Italian seasoning
4-6 cups water or beef stock

Directions:
Directions:
Toss stew meat in the flour in large bowl
Put 2 tablespoons oil in a large stock pot, when hot add meat and brown
Add Onion, and Garlic to pot, cook until softened
Add next 4 ingredients including Stewed Tomatoes
Add all seasoning and water or stock!
Cook on med for 1-2 hours
Add cabbage 30 minutes before serving!

The reason for the name of this dish is, we made it on Thursday or Friday and would use up all of the leftovers in the refrigerator that accumulated during the week!

Also this can be made using a slow cooker or instapot
Left overs can be frozen!
