2 1/2 cups of flour or enough to make a soft dough
2 tsp baking powder
1 cup of butter
2 cups of granulated sugar
2 eggs
1 cup shredded sweetened coconut (put through food processor)
1 tsp lemon extract

FROSTING
1 cup butter
4 cups powdered sugar
3-4 TBSP milk
1 tsp vanilla or use part vanilla/orange/lemon

Sift flour and baking powder
In separate bowl cream butter and sugar and then add eggs. Dareen uses extra large eggs and adds up to one cup of flour.
Add baking powder, extract, then coconut. Mix again then add flour. May not be the best way but uses less bowls.

Chill dough one hour (my note- I divide somewhat sticky dough into two batches, wrap in Saran wrap and put in the fridge overnight) Roll out between Saran wrap until it’s pliable

Roll out and cut into desired shapes. Bake at 375º for 8-12 minutes depending on the size of your cookie. Cookies should just start to brown. Cutting them can be challenging due to the coconut (food processor helps but not perfect)

Frosting - cream together ingredients using enough milk to makes frosting spread but not run. Add coconut on top of frosting
