1 pckg. Wonton wrappers, cut in half diagonally into triangles
Frying oil
8 oz. Mozzarella, shredded
˝ lb. Italian sausage, cooked and crumbled
10 slices of pepperoni, cut into 1-inch pieces
Pepperoncini, sliced (Optional)

Fry your wonton triangles in batches until just beginning to brown, ensuring that they’re crispy.

On a lightly greased baking sheet, lay out a layer of wonton chips, followed by a layer of mozzarella, a layer of pepperoni, and a layer of sausage. Place under the broiler until the cheese has melted, no more than 5 minutes. Keep an eye on them. Repeat until all of the chips have been used.

Garnish with sliced pepperoncini (if desired) and serve with spicy tomato sauce.

While supposedly Old Chicago uses pasta dough to make their chips, I've found that wonton chips are incredibly similar and make a great (and much easier at home) substitution.
