Ingredients:
Ingredients:
Crust:
1 1/4 cups graham cracker crumbs
1/4 cup sugar
1/3 cup melted butter

Filling:
5 -8oz packages of cream cheese
1 3/4 cups sugar
3 tbsp. of flour
1/4 tsp. salt
5 eggs
2 egg yolks
1/4 cup heavy cream

Directions:
Directions:
Mix Crust ingredients together and press into the bottom of a 9 Inch Springform pan
(I always put parchment paper in the bottom for better removal from the pan)

Beat cream cheese until soft. Mix sugar, flour and salt in separate bowl. Gradually blend into cream cheese, keeping the mixture smooth.

Add eggs and egg yolks, one at a time. Beat thoroughly after each one. Blend in heavy cream.
Pour into pan.
Bake in preheated very hot oven (475ºF) for 15 minutes. Reduce heat to very low (225º F) and bake for one hour longer. Turn off heat and leave cake in the oven for 15 minutes. Remove from oven and let stand on cake rack away from drafts until cold. Run knife around edge to loosen so as it cools it won't pull off the pan.
Chill. When ready to serve, remove sides of pan and bottom, put on cake plate and serve, with toppings if needed.
