1/2 cup shortening
2 cups flour
1 cup sugar
1-1/2 tsp baking soda
1 egg
1/2 cup cocoa
1 cup milk
1 pinch salt
1 tsp vanilla

Filling
1/3 cup evaporated milk
2/3 cup Crisco
3/4 cup sugar
1 tsp vanilla
1 pinch salt

Preheat Oven 425º
line cookie sheet with parchment paper

Filling
Cream sugar and Crisco in a bowl
add remaining ingredients and let stand or 1/2 hour

Cookie
Stir the flour, cocoa powder, baking powder and salt in medium bowl and set aside
Cream the Shortening and Sugar until light and fluffy, add egg and vanilla until well combined
Alternate adding and blending flour and milk to mixture until well combined. Mixture will be fluffy and slightly sticky like a thick cake batter.

Drop by teaspoon full onto cookie sheet about 2" apart
bake 6-7 min

Assemble
scoop filling on 1 cookie and sandwich with another
