4 scallions, thinly sliced
1/3 cup soy sauce
1/3 cup finely peeled fresh ginger
1/4 cup lime juice
1/ jalapeno, seeded and finely chopped
1 rack of lamb or 8 lamp chops
3/4 tsp green peppercorns
3/4 tsp coriander seeds
1 cup mango nectar
1/2 cup honey
4 rosemary sprigs, died together to make a "brush"

Directions:
Directions:
Stir together scallions, soy sauce, ginger, lime juice and jalapeno. Mix in a bag and add lamp chops, marinating for 6 hours to overnight.

Add peppercorn, coriander, and mango nectar (I will make my own, mango nectar by making a mango puree with fresh mango.), and add honey. Cook.

Take lamp chops out of marinade and discard marinade. Place lamp chops on a very hot grill. Brush lamb chops with rosemary "brush" and turn. Salt lightly.
