• 2 and ¾ cup all-purpose flour
• 1 tsp baking soda
• 1 tsp Diamond Crystal or ½ tsp Morton kosher salt
• 1 cup unsalted butter (2 sticks), room temp
• 1 cup packed light brown sugar
• ¾ cup granulated sugar
• ¼ cup white miso
• 2 large eggs
• 2 tsp vanilla extract
• 2 cups bittersweet chocolate chips (I prefer Ghiardelli)

• Whisk flour, baking soda, and salt in a medium bowl. Using an electric mixer on medium-high speed, beat butter, brown sugar, granulated sugar, and miso, scraping down sides of the bowl as needed, until light and fluffy (about 3 mins).
• Add eggs one at a time, beating well after each addition, and add vanilla with the second egg.
• Mix in dry ingredients and then stir in chocolate chips. Chill dough at least 1 hour.
• Preheat oven to 375. Using a 1-ounce scoop (2 tbsp), portion dough into balls on 2 parchment-lined baking sheets at least 2 inches apart.
• Bake cookies, rotating sheet pans about halfway through, for about 12-14 mins.
