Ingredients:
Ingredients:
3/4 cup sliced almonds (use a food processor to chop up almonds into pieces -
I always have whole almonds on hand; so I use these)
2 cups all-purpose flour, spooned and leveled
1/4 teaspoon plus 1/8 teaspoon SALT
1 cup unsalted butter, PARTIALLY SOFTENED
1½ cups confectioners' sugar, divided
1½ teaspoons vanilla extract OR USE almond extract

Directions:
Directions:
PREHEAT OVEN 375ºF - 12 MINUTES

1) Place the almonds in a food processor and process until tiny bits are formed. Set aside.
2) In a bowl, add the flour and the salt and whisk to combine.
3) In the bowl of a stand mixer - fitted with the paddle attachment, add the butter and 1/2 cup of the confectioners' sugar until it is just blended and slightly creamy.
4) Add the vanilla to the butter mixture and mix to combine.
5) Reduce the mixer speed to low and slowly add the flour mixture to the butter mixture until it is just combined.
6) Add the processed almonds to the cookie dough and mix until they are evenly distributed, folding with a spatula as needed.
7) Scoop the dough into balls that equal about 1 tablespoon and place them on an uncreased cookie sheet, fitting about 16 per sheet and evenly spacing them apart.
8) Bake the cookies until the bottoms are lightly golden-brown about 12 minutes.
9) Let the cookies rest on the baking sheet until they are cool enough to handle.
10) Pour the remaining confectioner's sugar in a small mixing bowl.
11) Dip and roll the baked cookies in the confectioners' sugar to lightly coat them, then transfer them to a wire rack to cool completely. Repeat the baking and coating process until all of the cookie dough has been used.
12) Roll the cooled cookies in the powder sugar a SECOND TIME, giving them a thicker coating.
13) Serve and enjoy!
