1 c whole almonds, toasted and chopped
1½ c unbleached all purpose flour
¾ c whole wheat flour
⅓ c cocoa powder
1½ tsp baking powder
½ tsp salt
⅓ c sugar
½ c brown sugar
3 eggs, room temperature
½ c olive oil
1 Tbsp pure vanilla extract

Preheat oven to 350º F
Line cookie sheet with parchment paper

Toast almonds for 12 minutes, flipping over half way through
Allow to cool completely before chopping

In a medium bowl, whisk all dry ingredients together

In a large bowl whisk all wet ingredients together

Add the dry ingredients into the wet ingredients and stir with a wooden spoon, until just combined
Fold in chopped almonds

Divide dough in half and form 2 log shaped mounds on the prepared baking sheet

Bake for 30 minutes
Allow to cool for 10 minutes before transferring to a cutting board
Use a serrated knife at a 45º angle to cut pieces that are ~½" thick
Place cut pieces back on baking sheet with the cut side down
Bake an additional 15 minutes
Flip each piece over and continue baking another 15 minutes
Transfer to a wire rack and allow to cool completely
