Great Grams sweet potatoes

Peel five or six sweet potatoes and cut them into 1 inch or two inch chunks. Great Gram would just slice them about an inch and a half thick.
Put them in a pan the same way you did the white potatoes, covered them with cold water add a generous amount of salt. Boil until they are fork tender. Drain them.
Layer them in the bottom of your foil pan, or Pyrex pan, in one layer like a jigsaw puzzle almost.
Top with cubes of butter (1 stick)
1/2-1 cup brown sugar
And bake that in the oven for about an hour
Sarah’s additions
I add 1 cup of orange juice
Grated orange peel
Fresh grated ginger

Bake for at least a hour, but they are forgiving so more time doesn’t hurt.
Take them out when they are golden brown and then just cover with foil and let it sit until the turkey comes out.
You will put that back in the oven with the mashed potatoes when the turkey is resting.
This way all of your food will be in the warming oven, essentially while your turkey breasts. So when you serve, you’ll slice your turkey, and then take all the sides out of the oven, and everything will be hot at once.
