5​​ chicken legs (or use the meat from a rotisserie chicken)
1 can​​ diced tomato
4-5 cups​ chicken broth
2 ​​bay leaves
Onion, carrots, celery chopped
​​Salt & pepper

Directions:
Directions:
If you’re using fresh chicken, remove the skin and boil the legs in a bit of water. Skim off any fat then add all the other ingredients and bring to a boil. If using rotisserie chicken just add everything at the same time. Bring to a boil then lower the heat to a medium simmer. Adjust spices to taste.
