sliced turkey pepperoni (suspect origins, but it really is less greasy than pork for this recipe)
one bunch scallions, sliced
two cloves crushed garlic
cherry tomatoes (mixed colors) halved
yellow and green pepper, diced
feta cubes, drained
one bunch basil, chiffonade
one bunch Italian parsley, leaves only, chopped
1 T. dried oregano
good quality olive oil
red wine vinegar
1 t. stevia
1 t. crushed red peppers

cooked, drained spaghetti or your favorite long pasta (bucatini is nice to soak up the dressing),

Mix all ingredients except pasta in large ceramic bowl.

Chill overnight, or use immediately with pasta

10 minutes, but best after an hour to let the flavors meld

This is an awesome party, picnic, or "thank goodness it's in the fridge already" easy lunch or brunch dish.

Variations:
swap the feta for fresh mozzarella balls (cut bitesized) and toss with warm pasta

eliminate the cheese altogether, and toss any left over charcuterie meats

+/- olives, depending on personal taste (same with celery)

swap the pepperoni for rotisserie chicken and swap all herbs for tarragon/parsley mixed
