1 Cup Butter ( I always use butter, especially for this specific cookie)
1/2 Cup White Sugar
1/2 Cup Brown Sugar
1 Egg - lightly beaten
1/2 tsp of Salt
1/2 tsp Baking Powder
1 1/4 Cup Flour
1 Cup Oats
1/2 Cup Coconut
1 Cup Rice Krispies
1 tsp Vanilla
1/2 Cup Pecans or walnuts

Bake cookies @ preheated oven 350 º cook for 9-10 minutes. Can flatten with a fork or leave a ball ( which ever you prefer) I change the cooking time because grandma Smith had cook at 375 for 15 minutes which I thought was way too hot and too long so maybe she liked them crispy crispy! 😜

Basically like all cookies; whip your egg, sugars and butter together well. Add dry ingredients. Mix. Fold in coconut, ricekrispie, pecans. Enjoy


These were always made by my grandma Smith (Dorothy) usually at Christmas. The use of butter makes them so rich and yummy and the rice crispy just adds such a good texture. It is a nice addition to your Christmas dessert tray.
