6 c sugar
2 c cream
1/4 t soda
1/4 lb butter
1 t vanilla
2 lb pecans chopped

2 c of the sugar into heavy aluminum or iron skillet over low heat. Stir with wooden spoon and keep sugar moving so will not scorch. Takes almost 1/2 an hour and must not smoke or turn dark. Will be light brown.
In another pan add 4 c sugar with cream to deep heavy kettle over low heat to cook slowly while sugar is melting.
As soon as sugar all melted begin pouring it into boiling cream and sugar keeping it on fry slow heat and stir constantly. Pour a very fine stream (the secret). Continue cooking and stirring until firm ball in cold water.
When ready, take off heat and add soda, stir vigorously as it foams up. As soon as mixed then add butter allowing it to melt as stir. Set aside for about 20 min, then add vanilla and begin beating. Use wooden spoon and beat until thick and heavy having a dull appearance instead of glossy sheen.
Add the chopped pecans and mix. Turn into sheet pan and cool. Cut into squares.

Oklahoma candy my grandmother made then my mother, my aunts, and I made. Then my children and sister and niece all made.
