1/2 vanilla bean halved lengthwise
1 c heavy cream
1/2 c sugar
Pinch salt
4 lg egg yolks
1 c creme fraiche
1 t lemon juice

Directions:
Directions:
Add seed from bean to 2 qt heavy saucepan.
Add cream, sugar, salt, and bring to boil stir until sugar dissolved. Remove from heat.
Whisk yolks in lg bowl til smooth then add half of hot cream in slow stream and whisk until combined well.
Add yolk mixture in slow stream to cream in pot, whisking, then cook over low heat, stir constantly until thickened and thermometer is 170-175º about 3 min.
Immed pour custard through fine mesh sieve into metal bowl set in larger bowl of ice and cold water. Cool to room temp, stir occ. about 5 min.
Remove from ice bath and gently whisk in creme fraiche and lemon juice til smooth.Freeze in container or ice cream maker
