Salmon Chowder

4 slices bacon chopped
1 cube butter
½ large onion or a bunch of green onions
2 stalks chopped celery
½ cup flour
3 or 4 large potatoes cubed
3 cups milk
1 cup half & half
2 cups water
1 ½ LB salmon (it is also excellent with smoked salmon)

Directions:
Directions:
Cook bacon until browned.
Add butter, onion, and celery and cook until onions are translucent.
Add flour, cook 3 minutes stirring constantly.
Stir in water.
Add potatoes and bring to a boil (We often precook the potatoes partially in the microwave)
Reduce heat to simmer and add salmon, milk and half & half.
Heat until thickened being careful not to boil at this point.
Salt and pepper to taste.
