3/4 cup yellow corn meal
1/2 cup flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/8 teaspoon red pepper (cayenne)
1 cup shredded Monterrey Jack cheese
4 oz chopped green chilies, drained
1 tablespoon minced onion
1 egg, beaten
1/2 cup milk
vegetable oil for frying

Directions:
Directions:
Combine all ingredients except the egg and milk in a bowl.
Make a well in the center of the mixture.
Stir the egg and milk together well.
Add this mixture into the well; stir until a batter forms.
In a Dutch oven, pour the oil to a depth of 3 inches, or in a deep fryer, heat the oil to 375.
Carefully drop the batter by rounded tablespoons into the hot oil, being careful not to splash. Fry a few at a time 3-4 minutes or until golden brown; turning once.
Drain them on paper towels.
Serve immediately.
