Ingredients: Hi Steven, Your Mom asked me to forward this recipe. I'll give you my best guess as to the amounts for feeding two people. I rarely make it the same each time but it doesn't seem to make much difference. ⅓ to ½ pound hamburg ½ of a medium to large onion cut into fairly large pieces 1 medium carrot diced 2 garlic cloves. pressed and cut into small pieces 1 stalk celery cut into 1/4 inch slices ½ red pepper cut into 1 x 1/4 inch pieces ½ green pepper same treatment 3 or 4 mushrooms sliced 1 tomato cut into medium pieces or 1/2 can tomatoes one hand full of spinach -- if you have it 1 cup elbow macaroni 1 can Campbell's tomato condensed soup 3 T. olive oil Salt pepper and cumin to taste

Directions:Heat the oil in a good sized pan. I use a wok Add the hamburg and onion and cook until onions are translucent--- fairly high heat I pour in a little red wine when that step is done Add the garlic and carrot and cook another 2-3 minutes (You should be boiling the water for the pasta by now. Don't forget to add a little salt to the water.) Add everything else (except the spinach) and continue to cook on medium heat Put the pasta in the boiling water and set a timer for 9 minutes. Sprinkle some salt, pepper and cumin over the whole mess After 4 minutes, add the can of tomato soup and stir In another 2 minutes, add the spinach. After 9 minutes, drain the pasta and add to your creation. Stir and serve. Have fun!!! Love, Gramp
