Pie Crust

1 c. flour
½ tsp. salt
3/8 c. shortening

Directions:

Mix until crumbly.
Add ¼ c. cold ice water.
Work it into a ball and roll out on a floured surface.
Place in pie plate.
Bake at 350º until golden brown.
 

Filling


Ingredients:

1 ¼ c. sugar
½ c. corn starch
¼ c. cocoa powder
Dash of salt
4 eggs separated
2 c. milk (whole)
3 tbsp. butter
1 tsp. vanilla extract

Directions:
Directions:
Mix sugar, corn starch, cocoa powder and salt together in a heavy saucepan. Add milk and heat just until it is almost boiling. Beat egg yolks. Temper the egg yolks into the hot mixture. To do this take a cup of the hot mixture out of the pot and cool for just a minute then slowly add egg yolks into the cup stirring constantly so the eggs do not cook. Slowly add this back into the pot stirring rapidly. Keep stirring until the mixture thickens and boil for 2 minutes constantly stirring. Turn off heat, add butter and vanilla and pour into cooked pie crust.
 

Meringue

4 Egg whites at room temperature (left over from pie)
1 tsp. vanilla
½ tsp. cream of tarter
½ c. sugar

Directions:
In a mixing bowl add egg whites, vanilla and cream of tartar. While mixing gradually add sugar and continue beating until peaks form when you lift the beaters up. Spread on top of pie and bake at 350º until golden brown.
