Ingredients:

3 egg yolks, beaten
1 cup sugar
3 Tbsp flour
2 Tbsp butter
1 tsp vanilla
1 1/2 cup evaporated milk
Pie crust
3 heaping Tbsp cocoa - mix with a little warm water to make a paste


Meringue:
3 egg whites - room temperature
pinch salt
1/4 tsp cream tarter
6 Tbsp sugar
1/2 tsp vanilla

Cook in double boiler - all of the above ingredients except pie crust.

Cook until thick like pudding. Pour into crust.

MERINGUE

In glass or stainless steel mixing bowl beat egg whites and pinch of salt on low speed until frothy. Add cream of tartar and increase speed to medium. Beat until fluffy and large bubble form around edges. While mixer is running, add sugar a few teaspoons at a time, mixing the sugar completely before adding more. Continue beating until firm peaks are glossy. Add vanilla. Spoon meringue onto hot pie filling and spread to edges to seal filling. Use spoon to "fluff" and make peaks. Bake 350º about 15 minutes or until lightly browned.
