2 eggs
Handful of spinach
1 T Milk
a little salt and pepper
30 grams chedder cheese
1 tsp cooking oil
1 tsp butter

Directions:

Beat the ingredients together minus the spinach
Add 1 tsp cooking oil to pan
Add 1 tsp butter
Saute spinach in the pan quickly
Add egg mixture
Done
Eat up

For my 35 Anniversary Married to my wife Lynn, we stayed at Cornucopia Lodge. It is over by Halfway, Oregon. The Lodge was having major construction when we were there last August. We don't usually get too excited about food but they had a nice breakfast prepared for us each morning we were there. One morning Lynn and I were seated and one of the items for the morning meal was scrambled eggs with spinach and cheese. I LOVED IT!! The egg scramble was good but the green spinach and cheese made it over the top for freshness!
