3 or 4 ripe bananas
1½ c sugar
½ c shortening
1 tsp vanilla
2 eggs
2 c flour
¼ tsp salt
1 tsp baking powder
1 tsp baking soda
½ c buttermilk
½ c pecans

Caramel Icing:
1 c brown sugar
1 stick of butter
¼ c milk
2 c powdered sugar
½ c pecans

Directions:
Directions:
Cream shortening and sugar. Add eggs and vanilla. Add rest of dry ingredients. Mix in buttermilk. Stir in mashed bananas and chopped pecans. Bake at 350ºF for 35-40 min or until done in center.
Make the icing while the cake is baking. Cook the icing ingredients except for the powdered sugar or pecans and bring to a boil for about 2 minutes. Set aside and let cool down. While it's still warm, but not hot, mix in the powdered sugar and beat with hand mixer until smooth. Pour over cake while still warm and sprinkle chopped pecans over icing right away while it's still wet.

I have fond memories of being in my grandma's kitchen in Montezuma, GA and can picture this banana cake in her kitchen cabinet which is still there where it was 60 years ago. I think anyone who bakes this cake will really like it.
Note from Clara: With vegetable shortening use ½ cup buttermilk and with butter or margarine use 2 T less. Very good.
