1 egg
⅔ c sugar
1 T flour (heaping)
½ c pumpkin
1 T melted butter
¼ tsp. ginger
¼ tsp. cinnamon
¼ tsp. pumpkin pie spice
½ tsp. salt
1¼ c milk
1 tsp. vanilla

Directions:
Directions:
Whisk the egg and add the pumpkin and melted butter. Blend in dry ingredients. Add vanilla and milk and blend everything together. Pour in unbaked pie crust. Bake at 350ºF for 35-40 min or until firm in the center.

One can of pumpkin is about 1¾ cups. This recipe only calls for ½ cup of pumpkin. When I make 3-4 pies I use one can for all and it's very good. If you're only making 2 pies I use the whole can so there's no waste and gives it more pumpkin flavor. It's good either way. Personally, I like to make filling for more than 2 pies and it makes it more of a pumpkin custard pie. Both ways are delish.
