1 lb. boneless & skinless chicken, cut into strips
1/3 c. cornstarch
1/4 c. vegetable oil
1/2 t. tarragon
1/2 t. thyme
1 t. pepper
1 c. scallions / green onion, chopped
2 cans chicken broth
3/4 c. Holland House cooking sherry
1 c. fresh sliced or canned mushrooms
3 tomatoes, cut into 1/8 pieces
cooked rice

Dredge chicken in cornstarch until coated. Brown in oil. Stir in seasonings & scallions. Cook 2 minutes longer. Add broth and sherry. Cook and simmer 20 minutes. Stir in mushrooms & tomatoes. Cover and simmer for 5 minutes. Serve over cooked rice. Serves 6.
