1 T butter
1/4 t fresh grated nutmeg
1 T fresh lemon juice and use the zest
3 T olive oil
1/2 med sweet onion thin slice
1 T mince garlic
2 t grated fresh ginger
Salt and pepper
1 lb spinach trimmed (about 16 loose pack cups)

12 in skillet,. Cook butter and nutmeg over med heat until butter is browned about 2 min. Whisk in lemon juice and zest and put in small bowl. Wipe out skillet.
Heat oil in skillet over med high heat. Add onion and cook, stir occ until golden brown in spots about 5 min. Add garlic,ginger,pinch of salt and cook til fragrant about 10 sec. Add spinach by handfuls and cook stir often until wilted. Toss with the brown butter mixture and season to taste with salt and pepper.
