6 large sweet potatoes( uniform size) preferably light yellow instead of orange.

1/4 -1/2 cup butter
1/2 cup brown sugar
1/2 cup whipping cream

Directions:
Directions:
Boil sw. potatoes with skin on until just tender. Cool completely ( I usually cook day before and refrigerate)
Just before serving cut each into thick wedges. In heavy skillet, melt butter, and add creme and br. Sugar.
Stir until it boils and thickened like Carmel. Gently add each
Potato wedge and fry in Carmel until they start to get a crispy edge on each side. Serve immediately.
