1/3 c pepitas raw
1 t plus 1/4 c olive oil
Salt and pepper
3 T fresh lemon juice
1 T Dijon
2 t maple syrup
4 c very thin slice green cabbage and/or fennel
1 1/2 c matchsticks Asian pear (about 1/2 lg)
1 1/2 c matchsticks peeled celery root or celery
1 1/2 c matchsticks peeled daikon
3 oz Manchego shaved, divided

Oven 350º
Toss pepitas with 1 t oil on baking sheet, season with salt and pepper. Bake about 5 min. Let cool. Fine chop 2 T.
Whisk chopped seeds, lemon juice, mustard, syrup, and remaining 1/4 c oil in med bowl. Season with salt and pepper.
Combine cabbage and/or fennel, pear, celery root, daikon, most of the Manchego, and remaining pumpkin seeds in a lg bowl. Drizzle dressing over the top and toss to combine. Season with salt and pepper. Top with remaining Manchego
