Ingredients:  
3 pound sirloin tip roast
1 envelope onion soup mix
1 can cream of mushroom soup (optional)
4 medium potatoes cut up (about 2 pounds)
4 carrots, cut up. (I use the bagged baby carrots and add about half)
salt and pepper to taste
1 Tbsp oil
3 cups of water or beef broth
cornstarch slurry

Directions:
Directions:
In large pot or dutch oven add oil, brown roast over medium-high heat to sear each side.

Add soup mix and water or broth to roast and bring to a boil over high heat then reduce heat and simmer covered, stirring occasionally for 2 hours. I flip the roast as well to avoid it burning on one side.

Add potatoes and carrots and cook for 30 minutes or until tender. Remove veggies to a serving dish.

Add Cornstarch slurry to thicken gravy. Can also be done using a flour slurry.

* to make slurry use 1 Tbsp cornstarch or 2 Tbsp flour to a small amount of water and mix until blended. Add to dish, stirring constantly to avoid lumps.
