Mango Squares Recipe

CRUST:
1 cup butter
2 cups flour
2 T. sugar
1/2 cup Macadamia Nuts or Nut of your choice

SECOND LAYER:
1 8 oz. cream cheese
1 cup powdered sugar
1 tsp. vanilla
1 8 oz. cool whip or make your own whipping cream

TOP LAYER:
2 envelopes unflavored gelatin
1 cup cold water
1 cup boiling water
4 T. lemon juice
1 cup sugar
5 cups mango (1/2" cubes)

Crust:
Mix flour and powdered sugar. Cut in butter and nuts. Press into 9x13 pan. Bake at 350º for 20-25 minutes. Let cool.

Second layer:
Cream the cheese, vanilla and sugar together till smooth. Add cool whip. Spread over cooled crust and chill till firm.

Top Layer:
Sprinkle gelatin over cold water. Add boiling water, sugar and lemon juice, mix well. Add mango to cooled gelatin. Chill till slightly firm. (I stir it up every 20 minutes) Pour over cream cheese layer and refrigerate. Cut into 2 inch squares.
