Ingredients: 1 ½ C sifted powdered sugar 1 C butter 1 egg 1 tsp pure vanilla 1 tsp almond extract (this makes the cookies so tasty!) 2 ½ C flour 1 tsp baking soda 1 tsp cream of tartar

Directions:Preheat oven to 375º
Beat sugar and butter at room temperature until fluffy. Add egg and extracts, Measure flour by dip-level-pour method. Blend all dry ingredients; stir in to other ingredients. Cut dough in half then refrigerate at least 3 hours or overnight. Roll out half the dough on a lightly floured surface. The dough can be as thick or thin as you like. The original recipe calls for 3/16” thickness. The thinner the dough, the crispier the cookie! Lots of people like them when thin and crispy. Cut dough with floured cookie cutters. Decorate with colored sugars BEFORE baking. Bake 7-8 minutes, depending on thickness of cookies. The cookies will be golden and slightly brown around the edges when done. Cool on pan for 2 minutes before moving to cooling racks. |

Notes: These cookies were a tradition in my house when I was a child. I learned to bake making these cookies with my mom. We gave them away to our relatives and friends in holiday tins. Zac, Seamus, Charlie and Bina all grew up helping to decorate and bake Christmas cookies with red, green and white sugar. We had cinnamon and rainbow sprinkles too! You could also bake the cookies and frost them.
