CAKE:
3 C sifted flour
2 tsp baking soda
2 tsp cinnamon
½ tsp salt
2 C white sugar

FROSTING:
6 ounces cream cheese
4 Tbs butter
3 C confectioners sugar
1 tsp vanilla

Directions:

CAKE:
Sift flour, baking soda, cinnamon, salt, together three times
In a large bowl, combine sugar and oil, blend in carrots
Add 1 egg and ¼ of dry ingredients at a time to carrot mixture, mixing well after each time
Add nuts

Bake in a prepared 9x13 pan in a preheated oven at 375º for 30 mins
Then bake for another 30 mins at 350 degrees
Cool completely before frosting

FROSTING:
Combine ingredients and mix well
Spread on cooled carrot cake

This recipe came from Grampa Z's mom, Harriet Zemba. It was at all the holidays dinners when I was a child visiting my grandparent's house. The cream cheese frosting is so yummy, don't hold back! You can leave out the walnuts or add raisins, depending on your preference.
