Ingredients: 5 C All-Purpose flour 6Tbs butter melted and then cooled to 100F 1.5 C whole milk, warmed to 100F 1.5 tsp table salt 2 Tbs instant dry yeast 1/4 C cane sugar 1 large egg, beaten tap water...1 Tbs at a time if needed

Directions:1. Mix flour and salt in a KitchenAid stand mixer; 2. Warm the milk to 100F and mix in the yeast & sugar in a large measuring cup...let sit; 3. Beat the egg in a cereal bowl; 4. Melt the butter gently and allow to cool to 100F; 5. Add all wet ingredients together into the measuring cup (mine is 1-quart version); 6. Use the paddle beater and turn the mixer on speed #1 and slowly drizzle in all wet ingredients until fully incorporated; if you need a little water add it 1 Tbs at a time; 6. Switch to the dough hook and need the dough for 4 minutes in the mixer; 7. Remove and place in a container until it doubles in size. 8. Form a dozen dough balls; flour them; place in a loaf pan or cupcake pan; grease the pan; cover and let rise for 30 minutes on the counter; 9. Bake for 20+ minutes at 375F in a preheated oven.

Notes: I used Gold Medal A/P flour because that is the brand used by Pizza All (All-Trumps is what he uses) and Frank Pepe (Full Strength is what he uses)...pretty strong brand endorsement; I buy Fleischmann's "instant" yeast at Sam's Club...does not need to be hydrated. Aunt Patty at the Montmartre made the best rolls...trying to catch her. Yes, these are better than the Texas Roadhouse.
