2 T. flour
2 T cold water
1 1/2 t. salt
1 t. Worcestershire sauce
Dash Tabasco or hot pepper sauce
1 pint shucked oysters
1/4 C butter (1/2 stick)
4 C whole milk, scalded (some recipes substitute heavy cream for part of milk)

In heavy saucepan blend flour, water, salt, sauces. Stir in undrained oysters and butter.Simmer over very low heat, stirring gently, till edges of oysters curl...3 to 4 minutes. Add hot milk; remove from heat and cover. Let stand 15 minutes. Float pats of butter and oyster crackers on individual serving bowls.

Oysters played an important role in American heritage food. Early settlers on the east coast depended on them as a major food source in the early days as they were easy to obtain on the coastline. Later, as folks moved west, they were harder to come by...and getting a barrel of iced oysters by railway became a Christmas treat. This stew was often made for Christmas Eve. My Dad made it himself...I had little interest then but love it now! Janice's family also served it on Christmas Eve...and maybe yours??
