4 loin chops
4 medium russet potatoes

Heavily dredge each pork chop in a seasoned flour and fry in bacon grease on both sides until browned. Peel potatoes and slice into 1/2” thick slices. Place slices on top of pork chops and add water until the potatoes are halfway covered. Salt and pepper to taste and then cover and cook for about an hour and a half on medium heat. If you are scaling up, you can fry the pork chops and then move the chops to an oven-proof dish. Cover the chops with potatoes but put water in the pan to scrape up all of the browned bits and then pour that over the potatoes. Salt and pepper. Cover with foil and bake for a couple of hours at 350.
