1 1/4 Cups Cooking Oil
3 Eggs
2 cups Sugar
2 Tsp Vanilla
3 Cups Plain Flour
1 Tsp Baking Soda
2 Tsp Cinnamon
1/2 Tsp Salt
3 Cups Diced Apples
1 Cup Chopped Pecans
1 Cup Raisins

Glaze (Optional)
2/3 Stick Butter
1 Cup Brown sugar
1/3 Cup evaporated milk

Directions:
Directions:
Combine first four ingredients together
Sift dry ingredients together and add to wet mixture
Slightly flour nuts and raisins
Fold all ingredients together

Bake in greased and floured tube pan

Bake at 325 degree for 1 1/2 hours or until toothpick in center comes out clean


Glaze (Optional)
Combine and cook 2-3 minutes, drizzle over cake while glaze and cake are still warm

Mom would always make this for holidays or church dinners - dense cake but moist and very good. More like a bread than cake really!
