1 c. sugar
2 tsp. ginger
1 tsp. nutmeg
1 tsp. cinnamon
½ tsp. salt
1½ tsp. baking soda
1 c. margarine, melted
½ c. evaporated milk
1 c. unsulphured molasses
¾ tsp. vanilla extract (optional but good)
¾ tsp. lemon extract (optional but delicious)
4 c. stone-ground or unbleached flour, unsifted

Combine the sugar, spices, and soda. Mix well. Add milk, margarine, and molasses. Mix well. Add flour 1 cup at a time stirring constantly. The dough should be stiff enough to handle without sticking to fingers. Knead dough for smoother texture. When dough is smooth, roll it out ¼ inch thick on floured surface and cut into cookies.
Bake on floured or greased cookie sheets in a preheated 375º oven for 10-12 minutes. The cookies are done if they spring back when touched.

This recipe is from Colonial Williamsburg, Virginia. It makes delicious, soft gingerbread. We prefer to form into balls and roll in sugar before baking instead of cutting out with cookie cutters.
