1 15½-ounce can pink salmon, drained
1 medium onion, peeled and finally chopped
3 tbsp butter, melted
3/4 cup finely crushed saltines
2 tbsp self-rising flour, plus some for coating
¼ tsp pepper
1 egg, beaten
3 tbsp milk
1 tbsp lemon juice
vegetable oil

Directions:
Directions:
1. Remove skin and bones from salmon; flake salmon with a fork.

2. Saute' onion in butter until tender, remove from heat. and add to salmon with all other ingredients, but oil.

3. Form into croquettes or small balls; coat with additional flour.

4. Deep fry in hot oil, 375º until golden brown.

5. Drain on paper towels.
