5 lb bag of potato's-cut in cubes
7 eggs-boiled, peeled and chopped
2 stalks of celery-diced
2 stalks of green onion-slicked thin
5 tablespoon of mayo or your desired amount
3 tbsp of pickle juice
salt and pepper to taste

Directions:
Directions:
Boil potatoes until tender and then drain water from potato's. Add all the other ingredients to boiled potatoes. Add the mayo and stir together. The potatoes will fall apart and that is okay. It will almost look like lumpy mashed potatoes, but this is how mom always served it. You can add less or more of the mayo based on your preference. You can garnish with some green onion slices or thinly sliced boiled eggs. Serve warm or cold. It is delicious either way.

This recipe's make a lot of wonderful memories come flooding back from our childhood. Mom always served this dish when dad would smoke chicken on his homemade smoker. Dad was an expert at smoking meat and he enjoyed sharing his food with others.
