2 ¼ cup flour
2 tsp baking powder
¼ tsp baking soda
½ tsp salt
1 cup sugar
2/3 cup butter
2 eggs
2 tsp vanilla
1 cup mashed ripe bananas
1 cup semisweet chocolate chips

In one bowl sift together flour, baking soda and powder, and salt. In another bowl mix sugar, butter, eggs, and vanilla thoroughly. Add dry to wet ingredients and blend well. Stir in bananas and chocolate chips.

Drop by spoonfuls onto greased cookie sheets and bake in 400-410ºF oven for 10-12 minutes. Let sit on the pan for 1-2 minutes before transferring to cooling rack. These cookies should be cooked hotter than you would expect so that the edges are a medium brown, it adds a lovely dark caramel flavour to offset the sweetness and lightness in the centre.
